Bao Zi 包子


I used the same ingredients as making buns 饅頭.

Meat Fillings (whatever you want to add)
  • ground pork
  • fine chopped green onion
  • soy sauce
Directions:
  1. I used about 60 g of dough for each Bao Zi 包子, roll it out into circular shape
  2. put meat fillings in the center and pinch the dough together until it forms a ball (I'm not good at it yet)
  3. put 1.5 cups of water in the electric rice cooker steamer
  4. steam until they are done and wait for another 3 minutes before taking them out

Buns 饅頭


Ingredients:
  • all purpose flour 500 g
  • sugar 60 g
  • salt 1/2 teaspoon
  • yeast 1 teaspoon + 1/2 teaspoon + 1/4 teaspoon
  • milk 300 ml (or water)
  • oil 1 tablespoon (I used olive oil)
Directions:
  1. mix dried ingredients together
  2. add milk or water
  3. mix until it comes together (I used my hand)
  4. then I used mixer to knead the dough for about 5 minutes
  5. add oil and knead about another 5 minutes
  6. put it away in a bowl or some sort of container, cover with damp cloth or saran wrap (until it doubles in size)
  7. roll it out into a rectangular shape, roll it up, and cut it into desire size
  8. put 1.5 cups of water into electric rice cooker steamer
  9. steam until they are done and wait for another 3 minutes before taking them out

Wonton



It took forever to ground my own pork. I'll ask grocery store to do it next time.

Ingredients
  • ground pork
  • fine chopped shrimps
  • fine chopped green onion
  • dried onion
  • soy sauce
  • wonton skin
Directions:
  1. marinate all the ingredients together except wonton skin
  2. put meat in the center of wonton skin and fold it, make sure meat doesn't come out (I made two types)
  3. put wontons in boiling water until they float
In this picture, I cooked wonton in miso soup with tofu.

Herbal Jelly with Taro and Sweet Potato Balls 燒仙草+芋圓+番薯圓


Ingredients:

Sweet Potato Balls 番薯圓/地瓜圓


Same directions as taro balls

Ingredients:
  • sweet potato / yam
  • sweet potato starch
Directions:
  1. steam sweet potato until it's cook (soft)
  2. after it's cook and while it's hot add sweet potato starch and mix it together (if taro is 100 g, you can add about 80 g of sweet potato starch and add more if needed..until it doesn't stick to our hands)
  3. roll it up and cut it
  4. cook them in boiling water until they float

Taro Balls 芋圓


Ingredients:
  • taro
  • sweet potato starch
Directions:
  1. steam taro until it's cook (soft)
  2. after it's cook and while it's hot add sweet potato starch and mix it together (if taro is 100 g, you can add about 80 g of sweet potato starch and add more if needed..until it doesn't stick to our hands)
  3. roll it up and cut it
  4. cook them in boiling water until they float


Cantonese Sponge Cake 馬拉糕

Ethan couldn't wait so he tried to eat it.


Ingredients:
  • all purpose flour 200 g
  • sugar 200 g
  • instant vanilla pudding 50 g (I didn't have custard powder so I substitute with this)
  • 5 eggs
  • baking powder 15 g
  • milk 100 ml
  • oil 50 g
  • little bit of water
Directions:
  1. mix flour, sugar, instant vanilla pudding together
  2. add eggs and mix until sugar is dissolve
  3. add milk and mix, then saran wrap it and wait for 2 hrs
  4. add 4 cups of water in the rice cooker steamer and wait until water is hot
  5. add a little bit of water into baking powder and then mix with what we had before (flour mixture)
  6. put the flour mixture in a 9 inch cake pan (that's what I used) and steam it for 40 minutes

Taro Bun 芋泥饅頭


This is my first time making bun 饅頭. It didn't look nice and clean but tasted ok.
Ingredients for the bun:
  • 1 tablespoon yeast
  • 1 tablespoon sugar
  • 1.5 cup hot water
  • 4 cups all-purpose flour
  • taro
  • butter
  • sugar

Taro
steam taro until it's cooked
add sugar and butter to taste

Directions:
  1. dissolve sugar and yeast in 1.5 cup of hot water (about 110˚) and wait about 5 minutes (you should see layer of foam forms on the surface)
  2. put flour and sugar yeast mixture together in a mixer, takes about 10 minutes to knead the dough
  3. put dough in a bowl and cover it with wet cloth or saran wrap about 1 hr or so or until it doubled in size
  4. knead the dough again and roll it out into a rectangular shape
  5. spread taro on the dough and roll it up
  6. cut into desire size
  7. I used electric rice cooker steamer. put 1.5 cup of water, steam until it's done, and leave it in for 3 minutes before taking buns out





BBQ Chicken Pizza (stuffed crust)


Ingredients:
  • pizza dough
  • chicken
  • bbq sauce
  • cilantro
  • onion
  • gouda cheese
  • mozzarella cheese
Directions:
  1. marinate chicken in bbq sauce (or you can just add bbq sauce after chicken is done) and saute until cooked
  2. put bbq sauce on pizza dough then onion, chicken, and cheeses
  3. put some cheese near the edge and roll it up and press it down (stuffed crust)
  4. bake it for 10 min at 500˚
  5. then put cilantro on the top after it's done

Asparagus with Beef Roll Up


Ingredients
  • asparagus
  • beef rib eye

Directions
  1. marinate beef rib eye for at least 30 minutes
  2. blanch asparagus (put asparagus in boiling water for 2-3 minutes), then put them in cold water
  3. wrap asparagus with beef rib eye and hold them together with toothpicks
  4. pan fried them


Preserved Mustard Green with Pork 榨菜肉絲

I like 榨菜。I was lazy chopping the pork belly. Normally, you should chop pork into skinny stripes。

Ingredients
  • a bag of 榨菜 (I used this one I bought from 99 Ranch)
  • pork (I used pork belly)
  • sesame oil
  • salt
  • pepper
  • garlic powder
Directions:
  1. soak 榨菜 in water for at least 30 minutes
  2. marinate pork with sesame oil, garlic powder, salt, and pepper for at least 30 min
  3. when you are ready to cook, drain the 榨菜 and stir fry with a little bit of oil
  4. since I used pork belly, I didn't use oil when I stir fried it
  5. when pork was almost done, I combined the two and stir fried them a little bit longer

Herbal Jelly 燒仙草


This is a super fast and easy dessert. Normally, I use 2 bags of herbal jelly mix (brand name: Regimen House) with 500 ml of water. I boiled the water first and then added the herbal jelly mix. You can add whatever you want in it. I have tried adding a glass jar of mixed fruit from the Phillipines (halo halo).

I added red bean and tapioca in this one.

Oreo Cookie Cheese Cake

This is my first attempt on making cheesecake. Eric found this recipe online.

Ingredients:
  • 26 oreo cookies, crushed in the blender, ( original recipe is 18 cookies, but I didn't think it's enough so I put 8 more )
  • probably 1/3 cup melted butter ( original recipe is1/4 cup, but since I added more cookies, I added more butter too)
  • 24 oz cream cheese
  • 1 ( 14 oz ) can sweetened condensed milk
  • 3 eggs
  • 2 teaspoons vanilla
Directions:
  1. mix oreos and butter
  2. press them down in spring form pan ( I covered spring form pan with foil )
  3. mix cream cheese, condensed milk, eggs, and vanilla together
  4. pour into spring form pan
  5. break 8 oreos and put on top of batter
  6. bake for 55 minutes at 300˚F
  7. don't bake till it cracks
  8. cool down and chill in the refrigerator before removing pan

Chicken Rotini with Alfredo Sauce

I used the Alfredo sauce that I made earlier.

Ingredients:
  • diced chicken
  • frozen mixed vegetables
  • Alfredo sauce
Directions:
  1. sauteed diced chicken
  2. add frozen mixed vegetables
  3. put Alfredo sauce and cook for 5 minutes in low heat

Alfredo Sauce

Since we have tons of cream cheese left, I found a recipe using cream cheese instead of heavy cream or whipping cream. This recipe is super fast and easy.

Ingredients found online:
  • 1/2 cup butter
  • 1 ( 8 oz ) cream cheese
  • 2 cups milk
  • 2 teaspoons garlic powder
  • 1/8 teaspoon ground black pepper
  • 6 oz grated parmesan cheese
Directions:
Melt butter in non-stick saucepan over medium heat. Add cream cheese, garlic powder, and ground black pepper. Add milk and whisk to smooth out lumps. Then add cheese.

Since I didn't have parmesan cheese, I used mozzarella cheese instead. This recipe didn't say to add salt, but I added salt to my own taste. I added more ground black pepper because to me 1/8 teaspoon was too little.

Hawaiian Pizza


pizza dough recipe can be found here

Ingredients:
  • pizza dough
  • sliced pineapple
  • tomato sauce
  • mozzarella cheese
  • sliced ham

Directions:
  1. roll pizza dough out and put on cast iron pizza pan (put some corn meal,prevent from sticking to the pan)
  2. spread tomato sauce
  3. put mozzarella cheese, pineapple, and ham, then add more cheese on the top
  4. bake for 10 min at 500˚

"CPK" Pizza Dough

Ingredietns:
  • 1 cup of warm water ( about 110˚F)
  • 3 tablespoons honey
  • 2 teaspoons active dry yeast
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Directions:
In a small bowl, put yeast and honey in the warm water and stir it well. After 5 minutes, the yeast mixture should begin to form a creamy foam on the surface of water. In the mixer, combine the flour and the salt together. After that make a well in the center and pour the olive oil and the yeast mixture and stir it until all the flour is incorporated. After that knead the dough for about 15 minutes, until it is smooth and elastic. In another bowl, put the dough with some oil in it. Then put a wet towel over it and let it rise about 1.5 - 2 hrs.
