Brown Sugar Snow Fungus Soup 黑糖桂圓紅棗枸杞白木耳甜湯

This is good for the summer.  This naturally boost your collagen.

Ingredients:

  • snow fungus (3)
  • dried longan (your own preference)
  • dried jujubes (your own preference)
  • dried wolfberry / goji (your own preference)
  • brown sugar (to your own taste)
  1. soak snow fungus in water for 1 hour, tear them into smaller pieces
  2. rinse other ingredients
  3. put all ingredients in rice cooker (my rice cooker can cook up to 10 cups, so I added water to the max)
  4. I used porridge mode on the rice cooker

Eight Treasure Rice 八寶飯

It's my first time making this, so it didn't look good.  I actually only put 4 things instead of 8.

Ingredients
  • sweet rice
  • sugar
  • oil
  • dried plums (prunes)
  • raisins
  • golden raisins
  • red bean paste
Instructions
  1. soak sweet rice for 1 hour and cook it in the rice cooker
  2. add sugar to your taste and add a little bit of oil
  3. spray cooking oil in the bowl
  4. put dried plums, raisins, golden raisins in place
  5. add red bean paste ( I should of add a layer of sweet rice first and then the red bean paste, and finally the sweet rice again )
  6. add sweet rice 
  7. steam it for 1 hour

Osmanthus Sweet Sauce Lotus 桂花蜜汁蓮藕


Ingredients
  • lotus
  • sweet rice
Sauce
  • water
  • osmanthus 
  • honey
  • sugar
  • dried plums
Directions
  1. pell the skin off of lotus
  2. soak sweet rice in water for 3 hours
  3. cut one end of lotus and stuffed it with sweet rice (put the end back and hold it with toothpicks)
  4. boil lotus for 2 hours
  5. slice lotus and soak it in the sauce and put in the refrigerator

Herbal Jelly with Taro and Sweet Potato Balls 燒仙草+芋圓+番薯圓


Ingredients:

Sweet Potato Balls 番薯圓/地瓜圓


Same directions as taro balls

Ingredients:
  • sweet potato / yam
  • sweet potato starch
Directions:
  1. steam sweet potato until it's cook (soft)
  2. after it's cook and while it's hot add sweet potato starch and mix it together (if taro is 100 g, you can add about 80 g of sweet potato starch and add more if needed..until it doesn't stick to our hands)
  3. roll it up and cut it
  4. cook them in boiling water until they float

Taro Balls 芋圓


Ingredients:
  • taro
  • sweet potato starch
Directions:
  1. steam taro until it's cook (soft)
  2. after it's cook and while it's hot add sweet potato starch and mix it together (if taro is 100 g, you can add about 80 g of sweet potato starch and add more if needed..until it doesn't stick to our hands)
  3. roll it up and cut it
  4. cook them in boiling water until they float


Cantonese Sponge Cake 馬拉糕

Ethan couldn't wait so he tried to eat it.


Ingredients:
  • all purpose flour 200 g
  • sugar 200 g
  • instant vanilla pudding 50 g (I didn't have custard powder so I substitute with this)
  • 5 eggs
  • baking powder 15 g
  • milk 100 ml
  • oil 50 g
  • little bit of water
Directions:
  1. mix flour, sugar, instant vanilla pudding together
  2. add eggs and mix until sugar is dissolve
  3. add milk and mix, then saran wrap it and wait for 2 hrs
  4. add 4 cups of water in the rice cooker steamer and wait until water is hot
  5. add a little bit of water into baking powder and then mix with what we had before (flour mixture)
  6. put the flour mixture in a 9 inch cake pan (that's what I used) and steam it for 40 minutes

Herbal Jelly 燒仙草


This is a super fast and easy dessert. Normally, I use 2 bags of herbal jelly mix (brand name: Regimen House) with 500 ml of water. I boiled the water first and then added the herbal jelly mix. You can add whatever you want in it. I have tried adding a glass jar of mixed fruit from the Phillipines (halo halo).

I added red bean and tapioca in this one.

Oreo Cookie Cheese Cake

This is my first attempt on making cheesecake. Eric found this recipe online.

Ingredients:
  • 26 oreo cookies, crushed in the blender, ( original recipe is 18 cookies, but I didn't think it's enough so I put 8 more )
  • probably 1/3 cup melted butter ( original recipe is1/4 cup, but since I added more cookies, I added more butter too)
  • 24 oz cream cheese
  • 1 ( 14 oz ) can sweetened condensed milk
  • 3 eggs
  • 2 teaspoons vanilla
Directions:
  1. mix oreos and butter
  2. press them down in spring form pan ( I covered spring form pan with foil )
  3. mix cream cheese, condensed milk, eggs, and vanilla together
  4. pour into spring form pan
  5. break 8 oreos and put on top of batter
  6. bake for 55 minutes at 300˚F
  7. don't bake till it cracks
  8. cool down and chill in the refrigerator before removing pan

Milk Chocolate Cake

I baked a cake for my Niece Vicky's birthday.  She also turned 13.  She is 6 days younger than Cathy.  

Ingredients
  • 1 box of Betty Crocker Super Moist Milk Chocolate cake mix (instead of using water, I used milk; instead of using lil, I used butter)
  • mini oreo cookies

Strawberry Cake

I baked a cake for Niece Cathy's birthday.  She turned 13.

  • 1 box of Betty Crocker Super Moist Strawberry cake mix (instead of using water, I used milk; instead of using oil, I used butter)
  • sugar powder
  • vanilla extract
  • canned peach
  • Teddy Grahams
  • gummy bears

Lemon Cake

I baked a cake for my mom for her birthday.

Ingredients
  • 1 box of Betty Crocker Super Moist Lemon cake mix (instead of using water, I used milk; instead of using oil, I used butter)
  • sugar powder
  • vanilla extract
  • 1 canned of peach
  • grapes
  • French vanilla ice cream
As you can see, ice cream was melting

Mango Pudding


I made mango pudding in the afternoon for tomorrow's baby shower. It was super easy and fast to make.

Ingredients

In a bowl combine
  • 1 cup of hot water
  • 1/2 cup of sugar
  • 3 envelopes of Knox gelatin
In another bowl combine
  • 1 cup of cold water
  • 1 can of mango pulp
  • 1 can of evaporated milk
combine both bowls and mix well

I pour the mixture into pudding cups and then put them in the refrigerator.

Red Velvet With Cream Cheese Frosting

I made my first cupcakes with frosting.

I followed Karen's recipe except adding less sugar, confectioners' sugar, and omit red food coloring.

Ingredients

Makes 12 cupcakes
  • 1 1/4 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick butter, softened
  • less than a cup sugar (about 3/4 cup)
  • 2 eggs
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
Vanilla Cream Cheese Frosting
  • 4 oz cream cheese
  • 1/4 stick butter
  • 1 tablespoon sour cream
  • 1 teaspoon vanilla extract
  • about 4/5 cup confectioner's sugar

Broken Glass Jell-o


I followed the recipe on Pink's website and did disolve each box of jello into 1.5 cup of hot water (according to Pink, it's too sweet if only use 1 cup of hot water). I made 4 colors of jello-o last night (berry blue, strawberry, lime, orange). This morning I cut them up into cubes. I dissolved 2 envelopes unflavored gelatin in 0.5 cup of cold water then added 1.5 cup of hot water with the condensed milk. I put those cubes of jell-o into a pan and then poured all the condensed milk into it.

I'll see how it turns out later. I am going to bring it to Kaichi and Jason's house tomorrow.
