Meat Ball 貢丸



Ingredients
  • ground pork - 3 lbs
  • potato starch - 4 tablespoons
  • sesame oil - 1 tablespoon
  • salt - 1 1/4 teaspoon
  • Hondashi - 1 tablespoon
  • sugar - 2 teaspoons
  • white pepper powder - 1 teaspoon
  • baking powder (Dr. Oetker brand only) - 1 pouch
  • ice water or ice - 1/2 cup
  1. put all ingredients in mixer (I used Kitchenaid mixer), use 4 speed and mix for 6 - 7 minutes (slowly add ice water / ice so ground pork stays cold)
  2. freeze for at least 4 hours
  3. try to squeeze the ground pork into a ball 
  4. cook them in a pot of water (put them in while the water is warm)
  5. medium heat (cook a little longer after they float)
